They descend up to 32 meters under the city and meander for over 20 km through the entire Canelli hill. They are called “cathedrals” because they create mystical, almost spiritual, environments and are true masterpieces of engineering and enological architecture. In these exposed brick cells of varying size and space, thousands of bottles of fine wine are left to ferment at a constant temperature of 12-14 degrees, taking on the typical aromas and flavors of Canelli’s sparkling wine. They have been also included in the UNESCO World Heritage List.
